Heavenly Peach Greek Yogurt Cake
This vegan peach cake is delicious, moist, and great for any event. Almond flour and vegan Greek yogurt give it extra richness and texture, and the fresh peaches on top give it a burst of fruity sweetness.
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup unsweetened almond milk
- 1/2 cup vegan Greek yogurt
- 1/4 cup coconut oil, melted
- 2 tsp vanilla extract
- 2 peaches, sliced
Instructions:
Preheat oven to 350F 175C and grease a 9-inch round cake pan
In a large bowl, whisk together all-purpose flour, almond flour, sugar, baking powder, baking soda, and salt
In another bowl, combine almond milk, vegan Greek yogurt, melted coconut oil, and vanilla extract
Pour wet ingredients into dry ingredients and mix until just combined
Pour batter into prepared cake pan and arrange peach slices on top
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely
