Grilled Pineapple Chicken Kabobs



Delicious and flavorful Grilled Pineapple Chicken Kabobs that bring a perfect blend of sweet and savory to your barbecue. These skewers are an excellent choice for a summer cookout or any outdoor gathering.

Ingredients:

  • 5 lbs boneless, skinless chicken breasts, cut into chunks
  • 1 fresh pineapple, peeled, cored, and cut into chunks
  • 1 red bell pepper, cut into squares
  • 1 red onion, cut into squares
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

In a bowl, whisk together soy sauce, honey, olive oil, minced garlic, ground ginger, salt, and pepper to create the marinade

Place chicken chunks in a resealable plastic bag and pour half of the marinade over them

Seal the bag and refrigerate for at least 30 minutes overnight for best results

Preheat the grill to medium-high heat

Thread marinated chicken, pineapple chunks, red bell pepper, and red onion onto the soaked wooden skewers in alternating order

Brush the skewers with the remaining marinade

Place the kabobs on the preheated grill and cook for 12-15 minutes, turning occasionally, until the chicken is fully cooked and has a nice char
