Crab Salad with Peaches and Avocados



A delicious and refreshing dish, this Crab Salad with Peaches and Avocados combines the sweet taste of peaches with the rich, creamy avocados and the salty taste of lump crabmeat. This summer salad tastes great because of the tangy lime dressing that goes with it. It's also very light and healthy.

Ingredients:

  • 1 pound fresh lump crabmeat
  • 2 ripe peaches, sliced
  • 2 avocados, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Mixed greens for serving

Instructions:

Toss the crabmeat, peaches, avocados, red onion, and fresh cilantro in a large bowl until everything is well mixed

To make the dressing, mix the olive oil, salt, pepper, and fresh lime juice in a small bowl with a whisk

Mix the crab salad ingredients together, then drizzle the dressing over them and gently toss to coat everything

Place the crab salad in the fridge for about 30 minutes to allow the flavors to mix

Place the crab salad on a bed of mixed greens

If you want, add more cilantro on top
