Cheddar Ale Soup



A rich and flavorful Cheddar Ale Soup with a perfect blend of sharp cheddar, ale, and aromatic vegetables. Comfort in a bowl!

Ingredients:

  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup ale or beer
  • 1 cup whole milk
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions:

In a large pot, saut onions, carrots, celery, and garlic in butter until softened

Stir in flour to create a roux, cooking for 2-3 minutes until golden brown

Gradually whisk in chicken broth, ale, and milk, ensuring no lumps

Simmer the soup until it thickens, stirring occasionally

Add shredded cheddar cheese and Dijon mustard, stirring until cheese is melted

Season with salt and pepper to taste

Serve hot, garnished with chopped chives
